Living on Crock Pot Meals

One of the greatest gifts I ever received was my crock pot. It is the one kitchen item that I can always count on to make my family a great meal and doesn't require a lot from me. I LOVE IT. All of my friends receive them as wedding presents from me. One of my favorite crock pot meals is - "Crock Pot Chicken Chili." It may sound odd to use Chicken as the ingredient instead of beef, but my husband loves it and it's quite a bit healthier AND best part, it falls within Weight Watcher points as an ok meal to eat! Here is my quick, easy recipe:

Crock Pot Chicken Chili

1.3 pounds (20 oz) ground Chicken
1 small Onion (chopped)
1 container Chunky Salsa
2 tbsp chopped garlic
1 can (16 oz) tomato sauce
1 can (15 oz) dark red kidney beans
1 can (15 oz) light red kidney beans
1 can (15 oz) garbanzo beans
1 can (4.5 oz) chopped chilies
2 tbsp Chili Powder (or more to taste)

Brown chicken and onion in medium skillet over medium heat until cooked through. Drain fat and pour chicken and onions into crock pot. Add all remaining ingredients to crock pot, mix well. Cook on high for 4-6 hours. Add favorite toppings: cheese, onions or cilantro.

This recipe makes a ton of chili for our fam and my husband will eat on it for days! He loves leftovers and thank goodness because I haven't mastered cooking for just 2 yet :) I love cooking in the crock pot so stay tuned for future crock pot recipes! As always, Stay Fabulous & luv! --S.R.
