My husband calls them "Eggs & Bacon Muffins."
*The amount of eggs & bacon is determined by you. However many people you want to feed!
-Muffin Tray
-Eggs
-Bacon
Cook bacon strips halfway. DO NOT cook bacon until crisp, you want to be able to twirl it without the bacon breaking. But, you want to cook it enough to get rid of some of the bacon grease. Drain onto paper towels. Lightly brush the muffin cup tray with butter. (I usually just use a paper towel and rub the inside of the tray) Coil the bacon slices around the wells of the muffin tin. Crack an egg into each muffin tin cup, so that the egg cooks inside of the bacon. Sprinkle with salt and pepper.
Bake @ 375 for 10 mins, or until egg is cooked to your liking. Pair with toast! Ta Da. Bacon and eggs for everyone and an easy way to impress guests!
