Living on PIZZA!!!!

One of my favorite things to eat in the whole world is PIZZA. I love it. I crave it. I live for it! I love making my own homemade pizzas. First, I can control the amount of CHEESE and I can make all different kinds and since I'm making it at home I tell myself it will be slightly healthier :) But who are we kidding, you don't eat pizza because it's healthy! Before I started Weight Watchers last week we had friends down and I decided to make Pizza. I tried a new recipe which was a HIT and I would like to share. It was Cali Chicken Pizza (a knockoff of California Pizza Kitchen's BBQ Chicken Pizza). It was DELISH

Cali Chicken Pizza
1 pre-made pizza crust
2 Chicken Breasts
1 1/2 cups BBQ sauce (or more to taste)
1 cup shredded mozerella
1 cup shredded Gouda (this is what gives it the smoky flavor)
1 small, chopped red onion

You can definitely make your own dough for this but I didn't want to spend all day cooking so I went with the pre-made crust and it was still amazingly awesome!

I let the defrosted chicken breasts marinate in 2/3 cup of BBQ sauce for a couple of hours. Then you cook them and cut into thin strips. Let cool. Preheat oven to 500 degrees Fahrenheit. Spread 2/3 cup BBQ sauce on the pre-made pizza crust. Sprinkle the Gouda and half the mozzarella cheese on crust. Sprinkle chopped onion and spread chicken slices on crust. Then cover with remaining mozzarella.

Cook for 8-10 minutes or until crust gets as crispy as you like. Watch it though so you don't burn the edges. I like to cook the pizza with no pan directly on the rack for a crispy crust! DONE!!! Serve with a Caesar Salad and you have a tasty meal for four! Stay FAB & Luv -- S.R.
